The encryption levels are the same for each certificate, what differs is the vetting and verification processes needed to obtain the certificate.
Organization Validated (OV SSL) Certificates
The Certification Authority checks the right of the applicant to use a specific domain name and conducts some vetting of the organization. Additional vetted company information is displayed to customers when clicking on the Secure Site Seal, giving enhanced visibility in who is behind the site and associated enhanced trust. Organization name also appears in the certificate under the ON field.
Extended Validation (EV SSL) Certificates
For customers aimed at asserting the highest levels of authenticity, this is the ideal solution. During verification of an EV SSL Certificate, the owner of the website passes a thorough and globally standardized identity verification process (a set of vetting principles and policies ratified by the CA/Browser forum) to prove exclusive rights to use a domain, confirm its legal, operational and physical existence, and prove the entity has authorized the issuance of the certificate. This verified identity information is included within the certificate.
